My beetroot salad

I am having this sudden craze for beetroot since I first had it with bake fish at my Aunt's place in Perth. I have never tasted it before prior to that, the name and look of it is rather like something you shouldn't toy with.

But I thought that the bake fish and beetroot was just excellent together and I have never turn my back on it since!

Many months later I came across a website about antioxidants good for fighting Cancer and beetroot was among it. The ultimate hunt for beetroot began. Searching the supermarkets, my Husband only manage to find it in Jaya Grocer, the international grocery mart.

Later when the Husband flew to Sydney, he brought me back a GINORMOUS big can. (macam perli lah pulak..) And from all the craze, my dear little boy Amir, brought back beetroot chips from Melbourne.

It was excellent. I even managed to get my Husband to eat some of the Cancer-fighting ubi beet.

So, when I was looking around about beetroot recipes, I noticed a lot of recipe incorporates fish. I suppose it just goes well together. So following one recipe, I made a beetroot salad with tuna and penne.

Slightly modified to suit my day.


Beetroot and tuna with penne salad

Salads are extremely simple to make but I don't have a flare for plating it just yet. I thought my assemble looked terrible!

The recipe from BBC uses mackerel but since I could only see canned mackerel in tomato sauce on the shelf, I took Tuna Chunks in Olive Oil instead. Then, I won't have to add my own olive oil to the salad. (Not a very smart idea since the oil and tuna is drenched in preservatives...)

I didn't bother to warm my tuna either, I ate my salad cold since my beetroot was also kept in the fridge.

Another change I made was by adding about a cup of penne. I just bought wholemeal penne from the mart and wanted to try it out instead of the recipe's original boiled potatoes. I didn't add any salt, pepper or anymore salad dressing as the flavor from the beetroot juice and tuna oil perfected everything.

Try is out! It really is a nutritious meal.

Ingredients :
~Mixed salad or any salad of your choice (rocket salad would be great to add a bitter flavor.
~Canned beetroot
~Canned Tuna Chunks in Oil (or in water if you'd like)
~Wholemeal Penne (or any small pasta for that) cooked and drained.

Plate the salad nicely. Add chuncks of the tuna and beetroot. Drizzle the oil from the tuna and add the penne on the top. EAT.

My first dinner rolls!

I attempted rolls yesterday and it was horrid! I have no idea what went wrong and I was clueless about the whole process of making bread. I have only seen the chefs at Hilton do it with those giant standing mixers and I never paid attention to the measurements.

I tried Zuchini and Mash yesterday and it was a disaster.

I woke up again today with high hopes and inspiration to succeed and I finally got it right!



I tried an entirely different recipe fro Indira's blog NoDesserts (which seems a tad easier) and I made my first pull apart dinner rolls. I must say her blog has this aura that pulls you to try whatever she is cooking/baking!

Such a deep sense of satisfaction. Husband and I have arguments once in a while and I've noticed the several times of being in the kitchen trying something new has raised the spirits and improve the mood!

Of course to only loose it when someone doesnt really appreciate your cooking or praising the talent. (LOL) But of course, it would make me entirely happy if you could help me out when I asked you too...

Oh well, it always has to be ME to change, ME who needs to be a better wife, ME who needs to be nice... It would be great to see some effort from you as well in certain areas you know I nag about...


But I guess it's too late. I've made up my mind and when I pretty much do so, there's nothing to change it!

MUAHAHAH!!

Must attempt more baker skills... =)
